Each year, Chef Mike works with local pig farmers to ensure a 50-pound pig is delivered fresh the Friday before the Super Bowl. All day Saturday, the pig is slow-smoked in Mike’s Global Grill’s custom-built smoking room.

The Pork
Each year, Chef Mike works with local pig farmers to ensure a 50-pound pig is delivered fresh the Friday before the Super Bowl. All day Saturday, the pig is slow-smoked in Mike’s Global Grill’s custom-built smoking room.
The Smoke
Chef Mike smoke's the pig for hours the night before Super Bowl Sunday, up to nine hours at roughly 225 degrees, over local nance hardwood. We will carefully remove the skin and clean it and fry it as crispy garnish on you pork plate. The pork uses Mike's special BBQ rub, and the meat is injected with a special blend of seasoning.
